50g Butter
100g dried plum
1tsp Flour
5-6cups Stock or water
½ tsp Bloomed saffron
1tsp Sugar
2tsp Sour lemon juice

2 Medium Potatoes

1- To prepare the meatballs, mix all the ingredients together and knead them for a few minutes. Then divide them into small portions. Roll them into a ball.
2- Roll the meatballs in the flour, fry them and set aside.
3- To prepare the sauce, fry onions with butter then add the garlic and cook until fragrant.
4- Add the flour and fry for about 30 sec.
5- Add cold stock or water gradually to dilute the sauce.
6- Add the roasted meatballs into the sauce. Cook for about 20 minutes on a low heat. Then add saffron, dried plum, salt, pepper, sugar and lemon juice. Wait until the sauce thickens.
7- To prepare the puree, boil the potatoes and beetroots. Grate them. Put them in a pan, add butter, milk, salt and pepper. Cook for a few sec.
8- Garnish meatballs with pistachios and barberry. Serve with saffron sauce and potato puree.
