Saffron Poached Pear

Poached Pear

2 medium Pears

250ml Barberry juice (substitute with orange juice if desired)

250ml Cherry juice

150g Sugar

1-2 tsp Lemon juice

2pcs Cinnamon

2pcs Cardamom

2-3tsp Mascarpone cheese

Saffron Milk

2cups Milk

½ cup Sugar

30g Butter

1tsp Vanilla

1/8tsp Ground saffron

Instructions

Poached Pear

1- Core pears from bottom, leaving stems intact and peel pears.

2- Put the pears in a pan and add cherry, lemon and barberry juice, sugar, cardamom and cinnamon to them. Then put the mixture on the medium heat to cook for 20-30 min.

3- Simmer, uncovered, until pears are almost tender.

4- Remove the pears, cardamom and cinnamon and continue to stir the sauce until thick.

Saffron Milk

1- Add sugar, vanilla and saffron to the milk and put the mixture on the medium-to-low heat and stir it regularly for 10-15 min until thick.

2- Remove from the heat and add the cold butter to the mixture and continue to stir until the mixture in smooth.

Serve the pears with mascarpone cheese and saffron milk.
